Eighteen months after the closure of Thoumieux in Paris and 9 years after leaving the Strato lodge in Courchevel, where he gained two Michelin stars, Sylvestre Wahid is back in the prestigious Three Valleys resort. He has just opened the new gastronomic desk at the 5-star Les Grandes Alpes 1850. The setting: a wonderfully elegant mini-room, staged by Jérôme Bugara and furnished by Tristan Auer, with discreet references to the mountains and snow. The environment: assured intimacy with a maximum of twenty covers, a clearly visible kitchen with uncommon closeness to the chef. The menu: 7 or 15 courses with the Roscoff crab, a signature dish, and the fashionable Savoyard tartlet, a current creation. Great art!
